Happy April Fools…wow, are there ever a bunch of spoofs going around today. Not that I didn’t expect it to though. Because I was prepared, I’ve been skeptical of just about everything today.
That’s right. I’m on high alert so if you’re gonna try to get me—it better be smooth…
…as smooth as this YUMMY avocado ice-cream turned out. LOL
I’m coaching my 10-Day Detox program this week, wrapping up next week, and you must follow my low glycemic nutrition plan. Yes, this program does reduce cravings (amongst many other badass benefits!) but hey, I’m not totally craving-bulletproof here. So it’s all about creating healthy “trade offs” and linking them with pleasure…even better if you can tie in the pain link with any processed and refined sugary indulgences. That helps bigtime with maintaining your amazing results you get from the program—forever!
Any way, my girlfriend—and one of my amazing clients—suggested an avocado ice-cream for a “cheat” after the detox was over. After I looked through the recipe she sent, I thought this could totally be revamped and made to be detox friendly. As a matter of fact, I’ll be adding it to my 10-Day Meal Plan it came out SO GOOD.
So here’s what you need:
- 1 + ½ Avocados
- 1 can Organic Coconut Milk, full fat
- 4 tbsp Golden Monkfruit (or classic, or stevia)
- ½ tsp Vanilla extract
- Dash of Pink Himalayan salt
What you do:
Get a medium-sized bowl that can go in the freezer.
Open the coconut milk can—do NOT shake it. Using a spoon, scrape out all the thick milk. The liquid can be saved and stored in the fridge for cooking, smoothies, etc.
Next, open the avocados, pop out the seeds, and add them in. Save the extra ½ with a dash of lime or champagne vinegar sprinkled on top to keep it from browning. Store it in fridge.
I used an emulsifier, but if you don’t have one a blender could totally work. Obviously if you use a blender, just put everything in there first.
Blend it up until fluffy. It doesn’t take that long. Then add in the golden monk fruit, salt, vanilla extract. Blend again.
Place the bowl in freezer for about an hour or two…maybe a little longer, depending how thick you want it. Be careful not to leave it in there too long because it gets super hard. Get out your ice-cream scoop and serve in your bowl of choice. Or hell, just grab a spoon and go for it.
I garnished mine with a mint leaf. Oh-my-gracious…it was so freaking good. Totally had to go for a second scoop. Thank God that filled me up because I could of definitely kept eating it!
Store any leftovers in the fridge. When you’re ready to indulge again, you can put it back in the freezer for about an hour or so. ENJOY!
